Man does it feel good to be back in my normal routine! As much as taking a break and slowing things down felt good (and was much needed) there is an uneasiness about breaking my routine. Anyone else feel me? Not only that, but a break in routine usually wreaks havoc on my blood sugar numbers and the past few weeks were no exception. But I’m back! and not only does it feel great but my blood sugar is pretty happy too.
The past couple weeks have been Christmas party galore for us! Between family parties and get-togethers with friends our weekends have been jammed packed. And when you have no free time and are moving a bit slower because you’re not feeling 100 bringing an appetizer or dessert can seem like a HUGE inconvenience.

My chocolate peppermint fat bombs are gluten free, dairy free, paleo, low carb, and packed with protein and healthy fats.

This recipe is almost identical to my traditional fat bomb recipe with a few tweaks. Feel free to roll these in peppermint bits too for added glam! Tho, if you go this route you might need to make them a bit stickier, so try adding more nut butter or coconut oil.
Chocolate Peppermint Fat Bombs
- 1/3 Cup Almond Butter
- 2/3 Cup Coconut Flakes (Unsweetened)
- 3 Tablespoons Coconut Flour
- 2 Tablespoons Coconut Oil
- 1/2 teaspoon Vanilla
- 2 Tablespoons Maple Syrup
- 1/4 teaspoon Peppermint or Mint Extract
- 2 Tablespoons Cocoa Powder (Unsweetened)
- Pinch of Salt
- Pinch of Cinnamon
- Mix all ingredients and refrigerate!
