Good morning and happy Thursday! How is your week going so far? We had quite an eventful Monday night, which dripped into our Tuesday and Wednesday. For those of you who follow me on Instagram you probably already know this, but Jett hurt his paw pretty badly Monday night. He somehow he clipped his nail just right during his nightly chase the squirrels out of the yard routine, and completely tore it off.
Poor dood(le). He’s been out of commision all week.
So while my blog posts this week have seriously lacked I did want to drop in, say hi, and share this awesome breakfast I made on Wednesday morning. It’s a combination of my low-carb oatless oatmeal and chia seed pudding.
I made the chia seed pudding the night before (2 cups of almond milk/coconut milk + ½ cup of chia seeds + 1 Tablespoon Maple Syrup + 1 Tablespoon Vanilla) and in the morning mixed it in a saucepan with my low-carb oatless oatmeal.
I topped it with pepitas, blueberries, hemp seeds, and pecans.
I have been craving all thing blueberry lately so this was the perfect breakfast!
