Finally we have caught a break in the heatwave! I’m not sure about the weather where you guys are, but here in New Hampshire we were in a crazy heat/humidity wave the past couple weeks and I was scrambling to find a low carb, paleo treat to cool down with. Thankfully I found one and just when I did the heatwave broke, go figure. But alas! You can still enjoy this ice cream paleo goodness even without crazy temperatures. And the best part it, you don’t even have to turn on your oven! Just mix, press, pour, and freeze.

Paleo Banana Ice Cream Cups

Ingredients
For the Crust

  • 1/2 Cup Coconut Flour, available here
  • 1/4 Cup Coconut Oil (melted)
  • 1/4 teaspoon Salt
  • 1 teaspoon Vanilla Extract

For the Ice Cream

  • 1 1/2 Frozen Bananas
  • 1 Can Full Fat Coconut Milk, available here
  • 1/4 teaspoon Salt
  • 2 teaspoon Vanilla Extract

Method

  1. Combine all crust ingredients in a bowl.
  2. Press crust mixture  into muffin cups (lined with paper or silicone cups). About one spoonful per cup.
  3. In blender, mix all ice cream ingredients until well combined (about 30 seconds).
  4. Pour ice cream mixture over crust, Top with cacao nibs or topping of choice.
  5. Freeze until set (about 4-6 hours)
