Good Morning! How is your Thursday going so far? While we didn’t experience the hurricane that the Carolina’s experienced earlier this week, we did get a bunch of rain on Tuesday & Wednesday so I’m happy we were able to start our morning today with a dry morning walk.
We were not so lucky yesterday and spent most of the day cooped up inside. But let’s rewind a bit… Breakfast yesterday morning was some low carb waffles topped with blueberries, hemp seeds, and my DIY Almond Butter Maple Syrup (almond butter, maple syrup, and water or coconut oil to thin).
This breakfast is so filling and doesn’t have a lot carbs. Check out my low carb waffle recipe here.
After breakfast I was able to get a few hours of work in while Miles napped. Depending on where Miles naps I will set up camp in the next room over.
It’s not the most luxurious office, but it’s portable which is convenient. And Convenience is my jam right now!
Speaking of convenience, my Pod expired when Miles was still sleeping so I was able to do a pod change with two hands.

When Miles woke up from his nap we went on small walk, played on the activity mat, bounced around a bit, and did some laundry. After about 2 hours he was ready for another nap and I was able to start on dinner! I made chicken cordon bleu with Daiya dairy free cheese and used an almond flour mixture in place of breadcrumbs. It was delicious!
After dinner Justin entertained Miles so I could remember what it’s like to have two hands. Jett decided he wanted in on the fun too and brought over his squeaky snake…which is very squeaky.
