I love to cook, however, when I get home from work I’m not always in the mood to spend hours in the kitchen. I’m looking for a dinner that’s fast and easy to make. Bonus points if it doesn’t call for a lot of dishes (‘cause cleanup is a real finger PRICK). That’s why I love these ginger garlic pork chops so much.
This is a prep the night before kind of dinner. Mix all the ingredients together and let sit flat in the fridge overnight. I use either a Ziploc bag or glass Tupperware container. I put them in the fridge around dinner time the night before, then when I wake up in the morning I flip the bag over and let the other side marinate. When I get back from work I take them out, cook them, and within 10 minutes they’re ready! Now that’s fast food!

This recipe calls for soy sauce however, since I’m paleo & gluten free any ol’ soy sauce won’t cut it for me (or you!). I use this brand of coconut aminos instead of soy sauce. Coconut aminos are incredible and taste just like soy sauce but without hormonal disturbing soy and GI aggravating gluten. It’s literally just sap from a coconut tree + salt. And some how it tastes like soy sauce – don’t ask me how, just aw in it’s magic.
I’ve had this recipe in my book for over a year now and every time I make it I always seem to pair it with sweet potatoes and broccoli. But since joining a veggie CSA this summer I’ve broadened my vegetable horizons and have gotten a little more daring.
Here I paired it with roasted beets, sautéed root vegetables, and purple sweet potatoes . So not too far of a departure from my norm. I’ve also used this marinade on chicken and it’s been AH-mazing.
