Since being diagnosed with celiac disease I have made it my mission to find a replacement for all of my favorite gluten-filled foods. Pancakes were the first food on my list and they were a total success! Check out my almond meal pancake recipe and my coconut flour pancake recipe. While we’re on the subject of pancakes, you also need to check out my blueberry pancakes and my new favorite… SPINACH PANCAKES that don’t taste like spinach!
Okay, I’m getting sidetracked. Back to biscuits.
Low Carb Paleo Biscuits
There are so many recipes out there for gluten free biscuits. Seriously, so many! But I wasn’t looking for just any GF biscuit. I was looking for gluten free, dairy free, low carb paleo biscuits that didn’t have a ton of ingredients and were super easy (and quick to make). Now that’s a little harder to come by.
The recipe I found has it all! Not only does it meet ALL of my dietary requirements, but it only has 5 ingredients and takes just 15 minutes to make!
For the longest time this recipe was written down on a scrap piece of paper that I kept in my purse. Once a week (at least) I would pull it out to make the biscuits. Why I still haven’t memorized this super simple recipe is beyond me! But even between all my purse cleanings it stayed in there. This one’s a keeper!
I use this same recipe for making sandwich bread (like here when I made turkey, apple, paninis). My low carb bread is on the left… Justin’s carb-loaded rasin bread is on the right, for comparison).
To do this, simply make the biscuits dough-balls larger and flatten them so they are more like patties. Then when they come out of the oven and have cooled I slice them to make them into bread slices.
