Let me preface this post by saying that these spinach pancakes are quite possibly the best pancakes I have ever had in my life. Ever.
I’ll admit, I was hesitant to try them because…well…they’re loaded with spinach; and while I do love healthy eating I’m not a fan of the taste of spinach. Also, I haven’t found too many pancake recipes that match up to the taste and consistency of regular pancakes, so I was kind of thinking that these would be your typical limp, rubbery, GF, DF, low carb pancakes, but packed with nutrients… boy were my taste buds in for a surprise!
I got the recipe from Lindsey over at The Toasted Pine Nut. I decided to try them because Lindsey has amazing recipes and everything I have ever made from her website has been incredible (like these cinnamon buns for example); but I only made half the batch because I wasn’t fully committed.
You Need These Spinach Pancakes In Your Life!
Trust me when I say, these pancakes will easily make it into your recipe book, and may quite possibly be the best pancakes you’ve ever had in your life. They rocked my world the first time I tried them and I knew I had to share this recipe with you, my low-carb-gluten-free-dairy-free-friends.
You will need a blender for these, I personally used my Nutribullet (this one here on amazon) and it was perfect.
Ermm, Are You Sure?
I can tell you’re still a bit hesitant. I totally get it – when I first made these I only made half the batch. But I promise you, you’ll be kicking yourself for not making the full batch.
And if you need a little more confidence to make these, Justin, my bisquick-pancake-loving-man, thought these spinach pancakes were delicious and put in a special request for me to make them last weekend when I was making us breakfast.

This recipe makes 10 big pancakes (I consider a 6″ pancake “big”). I’m full off of 3 of these babies, so I think it’s safe to say this recipe is enough for three people.

Spinach Pancakes That Don’t Taste Like Spinach
Ingredients
- 1 Cup Almond Milk
- Splash Vanilla Extract
- 1/4 Cup Coconut Sugar
- 1/4 Cup Ghee
- 2 Cups Spinach
- 2 1/4 Cups Almond Flour
- 1/4 Cup Flax Meal
- 1 teaspoon Baking Powder
- 2 Egg
Instructions
- Blend all ingredients in blender and cook on skillet.

Okay at first I saw these and thought no way, but then I thought they actually look kind of good… so I decided to make them this morning for breakfast and wow you weren’t kidding. These are the best pancakes I’ve made. Thank you for sharing the recipe!
