Are you guys as ready for the weekend as I am? After having my oral surgery last week I feel like my life has been on hold. I can’t wait to start eating solid foods again and getting back to my exercise routine. This weekend is the epitome of freedom for me and I cannot wait!
I don’t know if you guys have noticed it where you live, but here in New Hampshire the days are getting longer! The sun is peeking up earlier and setting down later which means Jett’s morning walks are back! And he is clearly not interested in wasting anytime with things like taking pictures.
Something about this time of year puts an extra pep in my step. Not only do I want to move around more, but I find it easier to put the chocolate down. Anyone else with me?
To fulfill my fat cravings I have been making these coconut crusted avocado bites! Even if you’re on the fence of kind-of-liking …. kind-of-not-liking the taste of avocados you will LOVE these. And the dip really takes them to the next level.
Just slice up an avocado, drizzle with lime juice, dip it in egg mixture (eggs, salt, pepper, garlic powder), then roll in unsweetened coconut flakes. Bake for 10 minutes @ 350, then broil high for 2 minutes.
For the dip, take your homemade mayo and add juice from ½ of a lime, 3 cloves of garlic, and about 1 tablespoon mustard.
