
When I think of summer, I don’t usually think of cookies. Warm, gooey, cookies (in my non-sweet tooth mind) are reserved for the fall and winter, not the hot summer months. So why am I posting a cookie recipe in July? It’s because these 3 ingredient lemon cookies taste like summer. All you need is some kind of nut butter (my favorite is almond butter), a lemon, and maple syrup (or honey). I sometimes add a pinch of salt to enhance the flavor, but that is totally optional.
These 3 ingredient lemon cookies are gluten free, dairy free, soy free, and have a lower carb count compared to most cookies.
Makes 12 Cookies
Lemon Cookies (per cookie): Calories: 144, Fat: 11.6g, Total Carbs 8.3g, Fiber 2.2g, (net carbs 6.1g), Protein: 4.3g
3 Ingredient Lemon Cookies
Ingredients
- 1 cup Almond Butter
- 1/4 cup Maple Syrup
- Juice from 1 Lemon
- 2 teaspoons Lemon Zest
- pinch of salt (optional)
Instructions
- Heat oven to 350°F
- Mix all ingredients, drop 12 spoonfuls on baking sheet.
- Bake for 12 minutes
