You’re here for the recipe, right? So let’s cut to the chase! These GREEN Cookies are bomb! Not only are they fabulous as a daycare snack (because they are nut-free), but they are super festive for St. Patrick’s Day & Christmas and are great as a frozen treat with some banana nice-cream sandwiched between them. MMMMmmmMMM!
Because I’m sure you’re probably wondering… the green color comes from a chemical reaction between sunflower seeds and baking soda – no dyes needed – just mother nature at her finest.
5 Ingredient GREEN Cookies
Ingredients
- 1 1/4 cup Sunflower Butter
- 1/4 cup Maple Syrup
- 1 Egg
- 1 tsp Baking Soda
- 2 tsp Cinnamon/Pumpkin Pie Spice
- splash Vanilla Extract (optional)
Instructions
- Bake at 325F for 12 minutes

Sunflower Seeds contain a solid amount of selenium, which plays a big role in detoxification! And they are a good source of magnesium. Magnesium is a super important mineral for anyone with an autoimmune disease. Read my post about magnesium and autoimmunity here. I like to use the Sunbutter brand.
Maple Syrup is also high in magnesium and is a great natural sweetener!

nice cream sounds heavenly, please explain more! what is nice cream and how do i make it?
It is heavenly! Nice cream is vegan ice cream. We make our own with bananas, a little bit of nut mylk, splash of vanilla, almond butter, and salt. Mix all together in your food processor. We spread nice cream in between two cookies, sandwich them, then freeze for about 30 min before eating. De-lish!
