This Mediterranean / Italian-inspired dish is the perfect weeknight (or any night) meal because of how fast it comes together! It’s seriously so simple to make, you’ll wonder why you haven’t tried it sooner.

Plus it only has five ingredients! It doesn’t get much simpler than that!

To make this super easy bruschetta chicken you’ll only need five ingredients:

  1. Chicken Breast
  2. Tomatoes
  3. Mozzarella
  4. Basil
  5. Balsamic Vinegar

The key to a good Bruschetta is to use high-quality ingredients and let the flavors speak for themselves. And trust me, when you combine the juicy tomatoes with the aromatic basil and tangy balsamic vinegar, you’ll understand why Bruschetta is a classic Italian appetizer that’s loved by many.

Healthy Ingredients & Endocrine Benefits

🍅 Tomatoes

Tomatoes are incredibly healthy if you have diabetes because they are rich in Vitamin C and potassium. Two nutrients that are quickly depleted when glucose levels are elevated.

🌱 Basil

Chicken breasts are a blank canvas that can be transformed into a delicious masterpiece with the right spices, herbs, and cooking method. As for benefits, chicken breast is packed with lean protein. It’s a great source of selenium which is excellent for endocrine and thyroid health. It’s also a good source of Niacin & B6 which play an essential role in cell function.

You may think that salt is the bad guy in the health game, but the truth is, salt can be a hero in your diet! Real salt is chock-full of essential minerals like sodium, potassium, and magnesium that are crucial for maintaining healthy blood pressure, electrolyte balance, and nerve function.

Variations & Substitutions

Now, let’s talk about some variations and substitutions you can make to this recipe.

If you don’t have chicken breasts, you can use chicken thighs. Or, if you don’t have any chicken on hand, pork chops or a white fish like haddock or cod would taste great!

If you’re not a fan of tomatoes, you can substitute them with roasted red peppers, sun-dried tomatoes, or even fresh strawberries for a sweet twist.

If you’re dairy free like me then you can either omit the Mozzarella all together OR you can use a dairy free substitute. For this recipe I used VioLife’s shredded mozzarella.

How I Make Easy Bruschetta Chicken

Step ONE: Salt & Pepper chicken breast.

Step TWO: In a bowl combine diced tomatoes, chopped basil, balsamic vinegar, and salt & pepper to taste. If you’re feeling fancy, you can also add some chopped red onion or roasted red peppers to the mix!

Step THREE: Spread tomato mixture over chicken breast, top with cheese, and bake at 375F for 35 minutes.

Step FOUR: Drizzle with Balsamic glaze.

Oh shoot! Don’t have balsamic glaze? GOOD! That store bought stuff is filled with junk anyways! Here’s how I make it QUICK using only 1 ingredient. ⤵

QUICK Balsamic Glaze Recipe

  • ½ C Balsamic Vinegar
  • 1 TBSP honey (optional)

Simmer in a saucepan on low until liquid is reduced by half (about 10 min). WATCH and stir because if you leave it alone for too long it WILL BURN. My family can attest to this.

Allow to cool for another 5-10 minutes and Voila! You have homemade balsamic glaze!

Serving & Storing This Easy Bruschetta Chicken

As for serving suggestions, this dish pairs well with a variety of sides.

We like to serve it over a bed of spaghetti squash (or spaghetti) with a side salad.

But we’ve also served it with garlic bread and roasted veggies such as zucchini, eggplant, or bell peppers.

I store my leftovers in the fridge for no more than 7 days.

Easy Bruschetta Chicken

Ingredients

Bruschetta Chicken

  • 2 lbs Chicken Breast
  • 5 Roma Tomatoes, diced
  • 5 Basil Leaves, chopped
  • 2 TBSP Balsamic Vinegar
  • Mozzarella Cheese
  • Salt & Pepper

Balsamic Glaze

  • 1/2 C Balsamic Vinegar

Instructions

Bruschetta Chicken

  • Lay chicken breast in a baking pan and season with salt & pepper.
  • In a bowl, combine diced tomatoes, chopped basil, and balsamic vinegar.
  • Spread tomato mixture evenly over chicken. Top with mozzarella.
  • Bake at 375F for 35 minutes.
  • Drizzle with balsamic glaze and serve.

Balsamic Glaze

  • Heat balsamic vinegar in sauce pan on a low simmer until liquid is reduced by half (about 10 minutes).
  • Allow to cool for about 5-10 minutes (it thickens as it cools).
