Easy Garlic Scape Pesto Recipe

If you’re a garlic lover (like me!) 😋🧄 then this garlic scape pesto recipe will become AN ABSOLUTE STAPLE in your home. It comes together so fast and easily and only has 4 ingredients!

  1. Garlic Scapes
  2. Olive Oil
  3. Salt
  4. Nutritional Yeast (or Parmesan Cheese)

What are Garlic Scapes?

Garlic scapes are a part of the garlic plant.

Specifically HARDNECK Garlic.

SOFTNECK Garlic does not produce a scape.

We have a lot of hardneck garlic here in New Hampshire because it’s cold hardy, making it perfect for locations that have short growing seasons.

The garlic you buy at the market is the root/bulb of the plant and garlic scapes are the “leaves” or the top.

When & Where to Get Them, Seasonally

You’ll typically see them in the late spring or early summer.

I like to batch make the pesto, then freeze, and use all year long.

You’ll see garlic scapes at farmers markets, farm stands, and in your own garden (or your neighbors).

I got these ones from my neighbor.

AND DON’T WORRY, Cutting off the garlic scape does not hinder the garlic bulb underground. So don’t fear harvesting the scapes.

What I Put It On; Garlic Scape Pesto

The more accurate question is what don’t I put it on.

Like the ol’ hot sauce saying goes, I put this sh*t on everything.

I put garlic scape pesto on:

  • Scrambled Eggs
  • Omelettes
  • Poppy Eggs (aka over easy eggs)
  • Hard Boiled Eggs
  • Basically any kind of egg!
  • Chicken
  • Steak
  • Deli Sandwiches
  • Toast

Easy Garlic Scape Pesto

Servings 8

Ingredients

  • 10-12 Garlic Scapes
  • 1/4 Cup Extra Virgin Olive Oil
  • 1 TBSP Nutritional Yeast (or parmesan cheese)
  • 1/8-1/4 tsp Salt

Instructions

  • Cut scapes into 1” pieces (roughly)
  • Put all ingredients in food processor and BLEND until desired consistency (about 2 minutes)
