Low Carb Waffles for Breakfast

Earlier this week I made my favorite low carb waffles. I topped them with frozen blueberries, hemp, and my almond butter maple syrup (which is a mixture of almond butter, maple syrup, and a bit of water or coconut oil to thin it out). I use the REAL maple syrup, but the sugar impact isn’t bad because I use a little less than a tablespoon (<10 carbs). And when you add the nut butter and water/coconut oil it really stretches it out so you still have a super robust flavor without all the sugar.

I got this creepy fall read from my Mom last weekend. She is in a book club and is always letting me borrow the books – the good ones only of course! I just started diving into this one and it already has me hooked.

Do I have any American Horror Story fans on here? We missed last years season The Cult which has a dark and twisted political theme to it, and as I was scrolling through Netflix yesterday I noticed they added it to their library! So if you’re wondering where I’ll be after dinner tonight… it will be on the couch binging a few episodes of AHS Cult.
