I didn’t realize how much I liked pork… until I stopped eating it. 😅

And one of the pork foods I miss the most? Hot Italian sausage.

You know the kind — spicy, savory, perfect next to over-easy eggs and breakfast hash. Absolute breakfast gold.

So naturally, I went on a mission.

I tested a LOT of turkey sausage recipes trying to recreate that classic hot Italian flavor. Some were fine. Some were sad. Some were absolutely not it. But I kept going, and thank goodness I did, because this one?

Bullseye. 🎯

The secret is fennel seed.

If you don’t have it in your spice rack, don’t panic — I didn’t either. It’s super common, easy to find at any grocery store, and 100% worth grabbing. Do not skip it. This is the ingredient that makes turkey taste like actual Italian sausage instead of “seasoned ground poultry.”

Trust me. This recipe hits.

Hot Italian Turkey Sausage (that tastes like pork!)

Ingredients

  • 1 lb Ground Turkey
  • 1 TBSP Minced Garlic
  • 1 TBSP Fresh Parsley 1 tsp if dried
  • 1/2 TBSP Paprika
  • 1 1/2 tsp Salt
  • 1 1/2 tsp Pepper
  • 1 tsp Fennel Seed
  • 1 tsp Onion Powder
  • 1/2 tsp Crushed Red Pepper
  • 1/4 tsp Oregano
  • 1/4 tsp Rosemary
  • 1/4 tsp Sage
  • 1/4 tsp Thyme

Instructions

  • Start cooking turkey in an oiled skillet.
  • Add spices. Cook until turkey is no longer pink.

A few notes before you make this your new go-to sausage recipe. First, don’t skip the fennel seed. I know it feels optional if you’re not used to cooking with it, but it’s the thing that gives this sausage that unmistakable Italian sausage flavor. Without it, the recipe is still good… with it, it’s AMAZING.

This sausage works great cooked in a skillet, baked on a sheet pan, or shaped into patties for breakfast meal prep. We love it with eggs, mixed into breakfast hash, crumbled into pasta dishes, or served alongside roasted veggies. It also reheats really well, which makes it perfect for busy mornings.

If you’re used to pork sausage, this turkey version might surprise you — in the best way. It’s flavorful, satisfying, and doesn’t feel like a compromise at all. Once you make it, you’ll probably find yourself doubling the batch… just saying.

We love this sausage paired with scrambled eggs, and cheese all wrapped up in a carnivore wrap

Made this over the weekend and my family loved it! We don’t eat pork after finding out it that it’s something like 98% simmilar to human DNA, hence why its used for tissue transplants. I can’t help but think that the body sees this as cannibalism when you *eat it* which = massive inflammation in the body. I cannot look at pork the same way after knowing this.
