Low Carb Paleo Waffles Recipe

Breakfast is easily my favorite meal of the day! And although I rarely depart from my beloved egg and sausage breakfast, I do love to sprinkle in variety. What I love about these low carb paleo waffles is how versatile they are! Not only do they serve as a stand alone breakfast, but you can also use them as the bread to make an egg sandwich with, or simply spread some almond butter on top and eat them as a snack.

These low carb paleo waffles are super quick to make and I often will make a double batch on Sundays so I can eat them throughout the week without having to worry about clean up.

These waffles have a sweet, almond-buttery taste, and are absolutely delicious! But if you’re interested in more of a savory waffle, you can just add some herbs like garlic powder, parsley, and thyme.

  • 2 Eggs
  • 2 Tablespoons Coconut Oil, melted
  • 2 Tablespoons Maple Syrup
  • 2 Tablespoons Almond Butter
  • 1 cup Almond Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Vanilla Extract
  • pinch of Salt
