How about all this warm weather?! Have you been loving it as much as I have? The last bits of our snow are finally melting and we are all getting spring fever around here.
pure joy right there ^^^
And what says HELLO WARM WEATHER more than smoothies?
Being a low-carb lady I have a love-hate relationship with smoothies.
I love how delicious they taste, however I don’t love all the sugar that comes with them. Which is why when I find a smoothie recipe that is low carb and isn’t loaded with artificial sweeteners (even if it is stevia) I get all giddy inside!
This recipe is adapted from the incredibly talented Detoxinista. I modified it slightly to make it lower in carbs but just enough so it still tastes incredible. If you find that it’s not sweet enough, throw in a second date.
Low Carb Shamrock Shake
Ingredients
- 1 – 1 ½ cup milk (I prefer almond or coconut)
- ½ avocado
- 1 handful spinach
- 1/4 teaspoon peppermint extract
- 1 medjool date (or 1 ½ tablespoon maple syrup, or half a banana)
- handful of ice
Method
- Blend all ingredients in blender and top with cacao nibs or chocolate bits.
- Enjoy!
