Oye Vey! It has been a crazy week. If you missed Tuesday’s post you might not know that Miles is going through his 4th developmental leap (which is a big one!). This means lots of fussiness, not a lot of sleep, and very little ‘me’ time. Needless to say, my meals have not been glamorous, but they have been fast! Here is a glimpse of yesterday’s eats…

breakfast

Breakfast is typically the easiest meal to make around here for two reasons. One: because I have Justin’s help in the morning. Two: Miles is the happiest in the morning so I can put him down and use my two hands. When I can get a solid meal like this it holds me over until lunch, no snack needed.

Lunch was chicken salad with a side of fruit. I LOVE chicken salad because it is so easy to make and lasts for a good part of the week. For my chicken salad I mix in red onion, celery, scallions, mayo, mustard, salt, and pepper.

I usually eat it over toast or wrap it up in lettuce, but lately I have been loving it on cucumbers.

guacamole

A little before dinner I started to get hungry again so I made myself some guac. I have been craving avocados lately and guacamole hits the spot just right! For my guacamole I mix red onion, lime juice, garlic, cumin, cilantro, and scallions.

For dinner I wanted to make something that was, yep – you guessed it, super fast, since this is the witching hour for Miles. And that something was loaded burgers with a side of green beans. The loaded burger has dairy free cheese, lettuce, pickles, onions, bacon, fried egg, ketchup, and mustard. This burger is so messy, I have to eat it with a fork. But man oh man is it delicious!
