What I Ate Today 7 Gluten-Free Dairy Free Low Carb Paleo

Talk about bizarre New England weather! This week has been a rainy, slushy, snowy, sunny, warm then cold then warm again kind of week. When the weather is all over the place like this my stomach doesn’t know what it wants… does it want a warm casserole for dinner or a fresh fruit smoothie? That’s why you’ll notice my meals are a mix of both right now. Let’s start with breakfast…


What I Ate for Breakfast


The blueberry smoothie has ½ a date (that’s been soaking in water overnight to soften. This helps it break up better in the blender), the water that the date soaked in, frozen blueberries, almond butter, hemp seeds, cocoa nibs, avocado, goji berries, camu camu powder (this is my favorite brand!), collagen, and a pinch of salt. I paired my smoothie with a couple of eggs, over easy, sauerkraut, bacon, and an avocado. I like to season my eggs with salt, pepper, and nutritional yeast. The nutritional yeast gives you a solid dose of B vitamins and a delicious cheesy flavor!


After Breakfast Snack

After my 2nd pumping session (pumping as in breastmilk, not insulin) I was RAVENOUS! I heated up some seedy flax bread that I made over the weekend a slapped some ghee on top to hold me over until lunch. This is the recipe I used.


What I Ate for Lunch

Salads are my lunchtime jaaaaaaaam right now. They are super easy to pack, you don’t need to heat them up, and you can throw ANYTHING on them. Yesterday I made a tuna salad, salad and topped it with crushed almonds, balsamic vinegar, avocado, and this everything bagel seasoning. OMG guys, I wish you could taste it through the screen. It was SO incredibly delicious.


After Lunch Snack

My snack after lunch was basically an extension of my lunch (flavor wise). Avocado, drizzled with balsamic vinegar, and seasoned with Everything Bagel Seasoning.


What I Ate for Dinner

For dinner I made this burger wrap using coconut wraps (which only have 4g net carbs!) These wraps aren’t super soft and can crack pretty easily which is why I like to panini press them because it makes them a bit more flexible. Note, definitely don’t refrigerate these after opening (which is exactly what the packaging says) because they crumble like dust when cold. You can get these wraps on

I added non-dairy cheese, red onion, lettuce, bread & butter pickles, and mustard & ketchup.

    everything but the bagel season is LIFE. I literally put it on everything i eat. I just tried my first celery juice the other day, supposed to be really good for thyroid health (according to that medical medium book). Was alright…. but I know it’s so good for me, so i’m gonna keep at it. maybe try to tweak it so it’s enjoyable hahahaha

      I just ordered that book! I am excited to read it. I’ve heard lots about raw celery and thyroid health too. Let me know if you find a good celery juice recipe!

    What kind of Tuna do you use? I used to eat tuna all the time until I realized how crappy conventional tuna is for you. Also, I am addicted to Trader Joe’s cauliflower Gnocci!

      I use SafeCatch tuna. I get it on Thrive Market. They test every tuna for mercury levels, they are sustainable caught and are dolphin safe, and they don’t have any additives. You should check them out!
