Holy sickness! Has everyone and their mother been sick this week? Between daycare colds and work bugs we’ve been dodging bullets left and right here in the Martin house. Miles wasn’t so lucky and ended up catching a cold late last week. And juuuuuuuust as he was on the tail end of it I noticed 3 teeth poking through. So our poor little dude isn’t catching a break.
When little dude doesn’t feel well, mama doesn’t sleep well, and when mama doesn’t sleep well, meals are down and dirty. Fast and simple. And usually very last minute.
Let’s start with breakfast.
Breakfast was a blueberry and almond butter smoothie. Normally I eat a lot more for breakfast but Miles wasn’t feeling his best and needed some extra lovin’ which is exactly what I gave him. Meaning I had a total of 3.5 minutes to make breakfast before I had to head to work.
By lunch time I was starvinngggg and only has this very poorly planned, last minute salad. It’s topped with grilled chicken, avocado, everything bagel seasoning, hummus, and homemade balsamic vinaigrette dressing. I was still hungry after this and had a couple kind bars (not my proudest moment because I completely forgot to bolus for them and shot up to the 300’s).
By dinner time my sugars were back in range (can I get an HALLELUJAH?!) and I was ready to chow! I made chicken fingers with some left over fajita seasoning and paired it with sauted broccoli, and cranberry-almond quinoa.
I have to say, this was a pretty lame day of food for me. I debated even sharing it with you guys because it was so blah. But I think it’s important to share that not every day is picture perfect food. I have days where my meals are granola bars & lame salads and I also I have days where my meals are elaborate and well thought out. It’s a delicate balance of I have my shit together and oh wait no I don’t.
