Hello and happy Friday!

We’ve made it through the week and are now onto the glorious weekend 😎

Per usual (and very intentionally) we don’t have much going on for weekend plans. We have a BBQ at our neighbors house and I’m taking an herbal tincture making class near me that I am VERY excited about.

But that’s it 🙏

In this week’s Life of a T1D Blogger post I wanted to share what a week of our meals looked like.

Meal planning has helped me on SO many levels.

It helps me:

  • make good food choices
  • eat dinner at a reasonable hour
  • eat seasonally
  • waste less
  • and it takes out that last-minute/end-of-the-day panic of “what am i going to make for dinner tonight?!”

I also follow Sarah Therese Co on YouTube and LOVE her latest video, it has given me some really good meal ideas!

1 Week of Meals

Monday – Bruschetta Chicken

I wish I grabbed a picture of the whole meal (with sides and sauce and all), but I only have this pic of the packed up leftovers.

Tuesday – Pizza, Chicken Salad, Grapes

This was a totally random, clean out the fridge, kind of meal. I like to put my chicken salad over lettuce, crunch tortilla chips on top, and drizzle EVOO & ACV on top!

Wednesday – Crazy Salads with PB&J protein Smoothies

This was another clean out the fridge kind of meal. Crazy Salads are what we call salads that just have a random assortment of ingredients on top.

This salad included:

  • Hardboiled Egg
  • Bacon
  • Cashews
  • Chicken Breast
  • Red and Green Onion
  • Red Pepper Hummus

Since they didn’t have many carbs, we paired them with PB & J protein smoothies.

Thursday – Egg Roll in a Bowl

This meal is a staple in our house. We make it just about every week.

Friday – Chicken & Steak Kabobs with Green Goddess Salads & Bone Broth Rice

Kabobs are one of those meals that feel so time consuming to make in my mind, but are actually so simple and fast. I really wish I incorporated them more often because this dinner was SO good!

Saturday – Leftovers

 

Sunday – (this pic is so ugly – but it tasted SO good!) Honey Mustard Chicken

This picture looks like a 2, but I swear, it tasted like a 9! Honey mustard chicken with garlic smashed potatoes and broccoli. and a side of watermelon
