Paleo Avocado Brownies

Makes 24 brownies

Ingredients

  • 2 avocados
  • 1 cup unsweetened applesauce
  • 3/4 cup maple syrup
  • 2 teaspoons vanilla extract
  • 6 large eggs
  • 1 cup coconut flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda

Method

  1. Heat oven to 350 degrees F.
  2. In a blender mix all ingredients.
  3. Place in a greased 9×13 pan, bake for 25 minutes (or until it passes the toothpick test).
  4. Allow to cool for 20 minutes before cutting into 24 brownies.

Nutrition Info (per brownie): 102 Calories, 5g Fat, 12.6 Carbs, 3.2g Fiber, 9.4g Net Carbs, 2.6g Protein.

    I made these last night and they were so good!!! I added walnuts and coconut flakes – and then preceded to eat half the batch LOL

      yes! you could always do agave nectar
