Sometimes the simplest meals pack the most flavor - and this is one of them!

This burger salad recipe is a favorite of ours! It makes it into our meal rotation almost every week. The secret sauce... IS THE SAUCE!

The T1D in me LOVES that there is no bread or processed starches AND that there is so much fiber packed into this meal; making mealtime bolusing so much easier!

Plus this whole meal whips together in just 35 minutes.

Ingredient Line Up

French Fries

  • POTATO: Star of the French Fry show.
  • COCONUT OIL: For baking the fries - it gives them that crispy CRUNCH!
  • SEA SALT: Enhances flavor.
  • SPICES: Our favorite flavor combo right now is Pepper, Garlic Powder and Nutritional Yeast

Salad

  • LETTUCE: The base of the salad. I like to use a crispy kind of lettuce, like Romaine or other crispy greens.
  • GROUND BEEF: We use locally raised beef that has been grass-fed and finished. Season it with salt, pepper, and garlic powder.
  • YOUR FAVORITE BURGER TOPPINGS: Our favorites are tomatoes, bacon, red onion, banana peppers, and avocado (or guacamole).

Special Sauce

  • MAYO: This is the base for the special sauce. For the love of all things good, do NOT use mayo that has canola oil, soy bean oil, vegetable oil, or palm oil. Our favorite brand right now is avocado mayo from Chosen Foods.
  • KETCHUP & MUSTARD: Classic burger flavor palate and essentials for the special sauce.
  • PICKLES: I find that classic dill or spicy pickles have the best flavor for this special sauce.
  • SPICES: Garlic powder and onion powder.

Let's Get Cooking: Burger Salad

START THE FRIES

Peel & slice potatoes into 1/2" spears. Toss with oil & spices. Bake.

NEXT, COOK THE MEAT

While fries are baking, start cooking ground beef.

NOW, SAUCE TIME

While the meat and fries are cooking, start mixing the sauce ingredients.

PUT IT ALL TOGETHER

Put lettuce in bowl, cover with cooked meat, then add burger toppings, fries, and sauce.

Burger Salad

Ingredients

French Fries

  • 2 Potatoes (i use russet)
  • 1 TBSP Coconut Oil melted
  • 1/2 tsp Salt
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/4 tsp Black Pepper

Salad

  • 2 lbs Ground Beef
  • 1 tsp Salt
  • 1 tsp Garlic Powder
  • 4 C Lettuce
  • Burger Toppings like: red onion, bacon, tomatoes, pickles, avocado (or guacamole)

Dressing

  • 1/3 C Mayo
  • 3 TBSP Ketchup
  • 1 TBSP Dijon Mustard
  • 1 TBSP Chopped Dill Pickles
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder

Instructions

French Fries

  • Peel and slice into fry shape (about 1/3" thick)
  • In a bowl toss sliced potatoes with coconut oil, garlic & onion powder, salt, pepper, and nutritional yeast.
  • Spread out on lined baking pan and bake at 425F for 30min.

Salad

  • While fries are baking, cook ground beef in skillet with salt and garlic powder, until no longer pink.
  • While ground beef is cooking, start to build salad bowls with lettuce and burger toppings. Top with ground beef and fries once ready.

Dressing

  • Mix all ingredients, pour over salad bowl.
